Der Thonine (Euthynnus alletteratus), im Volksmund auch „Kleiner Thun“ genannt, ist ein fester Bestandteil der mediterranen Küche. In Griechenland trägt er den traditionsreichen Namen Λεκατίκι (Lekatiki), der seine historische Bedeutung in der Esskultur widerspiegelt.
Mit bis zu 1,20 Metern Länge und 16 Kilogramm Gewicht zählt er zu den beeindruckenden Vertretern der Makrelenartigen. Dieses Rezept bringt den kleinen Thun in seiner reinsten Form auf den Tisch – einfach, aromatisch und typisch griechisch.
Zutaten für 2 Personen
2 frische Fische
1 Bio-Zitrone
2 Knoblauchzehen
1 Handvoll glatte Petersilie
Olivenöl
Oregano
Salz und Pfeffer
Zunächst den Backofen auf 200°C vorheizen. Währenddessen die Fische gründlich säubern, die Kiemen entfernen und innen wie außen mit kaltem Wasser waschen. Anschließend mit Küchenpapier trocken tupfen. Jede Seite des Fisches mit drei bis vier diagonalen Schnitten versehen, sodass Marinade und Hitze gut in das Fleisch eindringen können.
Nun Knoblauch fein hacken und mit Olivenöl sowie Oregano vermengen. Die Fische innen und außen mit Salz und Pfeffer würzen und anschließend mit der Knoblauch-Olivenöl-Mischung sorgfältig einreiben – besonders in die Einschnitte. Die Zitrone in dünne Scheiben schneiden und einige davon in den Bauchraum der Fische legen, die restlichen obenauf platzieren.
Ein Backblech mit Backpapier auslegen, leicht mit Olivenöl bestreichen und die vorbereiteten Fische daraufsetzen. Im heißen Ofen 20–25 Minuten backen, bis die Haut goldbraun ist und sich das Fleisch leicht von den Gräten löst.
Zum Servieren die Fische mit frisch gehackter Petersilie bestreuen und mit einem Spritzer Zitrone verfeinern. Direkt heiß genießen – oder als griechische Meze servieren: Das Fleisch von den Gräten lösen, abkühlen lassen, mit Olivenöl beträufeln und zusammen mit Tsipouro oder Ouzo sowie frischem Brot reichen.

Little Tuna in mediterranean Harmony
The Thonine (Euthynnus alletteratus), also known as “Little Tuna,” is an essential part of Mediterranean cuisine. In Greece, it carries the traditional name Λεκατίκι (Lekatiki), reflecting its historical role in food culture.
Reaching up to 1.20 meters in length and 16 kilograms in weight, it belongs to the mackerel family. This recipe presents the little tuna in its purest form – simple, aromatic, and authentically Greek.
Ingredients for 2 persons
2 fresh fish
1 organic lemon
2 garlic cloves
1 handful of flat-leaf parsley
Olive oil
Oregano
Salt and pepper
Preheat the oven to 200°C. Clean the fish thoroughly, remove the gills, wash inside and out, and pat dry with paper towels. Score each side of the fish with three to four diagonal cuts to allow both heat and marinade to penetrate.
Finely chop the garlic and mix with olive oil and oregano. Season the fish inside and out with salt and pepper, then rub carefully with the garlic mixture, paying attention to the cuts. Slice the lemon thinly, fill the belly with a few slices, and place the rest on top of the fish.
Line a baking tray with parchment paper, brush lightly with olive oil, and place the prepared fish on it. Bake for 20–25 minutes until the skin turns golden and the flesh comes away easily from the bones.
Before serving, sprinkle with chopped parsley and a dash of lemon. Serve hot straight from the oven, or transform into a Greek-style meze: remove the flesh from the bones, let it cool, drizzle with olive oil, and enjoy with Tsipouro or Ouzo and fresh bread.

Το Λεκατίκι σε Μεσογειακή Αρμονία
Ο Θονίνης (Euthynnus alletteratus), γνωστός και ως «Μικρός Τόνος», αποτελεί βασικό στοιχείο της μεσογειακής κουζίνας. Στην Ελλάδα φέρει το παραδοσιακό όνομα Λεκατίκι, που αντικατοπτρίζει την ιστορική του σημασία στη διατροφή.
Με μήκος που φτάνει το 1,20 μέτρο και βάρος έως 16 κιλά, ανήκει στην οικογένεια των σκουμπριών. Η συνταγή αυτή αναδεικνύει το Λεκατίκι στην πιο αγνή του μορφή – απλό, αρωματικό και αυθεντικά ελληνικό.
Υλικά για 2 άτομα
2 φρέσκα ψάρια
1 βιολογικό λεμόνι
2 σκελίδες σκόρδο
1 χούφτα μαϊντανό
Ελαιόλαδο
Ρίγανη
Αλάτι και πιπέρι
Προθερμάνετε τον φούρνο στους 200°C. Καθαρίστε τα ψάρια καλά, αφαιρέστε τα βράγχια, πλύνετε μέσα και έξω και στεγνώστε με χαρτί κουζίνας. Κάντε 3–4 διαγώνιες χαρακιές σε κάθε πλευρά για να απορροφηθεί καλύτερα η μαρινάδα και να ψηθεί ομοιόμορφα.
Ψιλοκόψτε το σκόρδο και ανακατέψτε το με ελαιόλαδο και ρίγανη. Αλατοπιπερώστε τα ψάρια μέσα και έξω και τρίψτε τα με το μείγμα, δίνοντας προσοχή στις χαρακιές. Κόψτε το λεμόνι σε λεπτές φέτες, βάλτε μερικές στην κοιλιά του ψαριού και τις υπόλοιπες επάνω.
Στρώστε ένα ταψί με αντικολλητικό χαρτί, αλείψτε το ελαφρά με ελαιόλαδο και τοποθετήστε τα ψάρια. Ψήστε για 20–25 λεπτά μέχρι να χρυσίσει το δέρμα και να ξεκολλά εύκολα η σάρκα από τα κόκαλα.
Πασπαλίστε με φρέσκο μαϊντανό και λίγο λεμόνι πριν το σερβίρετε. Απολαύστε το καυτό ή μετατρέψτε το σε ελληνικό μεζέ: αφαιρέστε τη σάρκα από τα κόκαλα, αφήστε να κρυώσει, περιχύστε με ελαιόλαδο και σερβίρετε με τσίπουρο ή ούζο και φρέσκο ψωμί.
👉 Η συνταγή αυτή μπορεί να γίνει εξίσου νόστιμη και με άλλα είδη ψαριών.
